Gluten Free Chocolate Chip Cookies Recipe

Summer is officially here. Kids are playing outside, and pools are starting to open. What a fun time of the year! Nothing can make the summer better than a few quick and easy recipes to share with your family and friends! Try this ooey-gooey recipe for a healthier version of the classic chocolate chip cookie. They are delicious and gluten free. Enjoy!

Gluten Free Chocolate Chip Cookies, makes about 22

Ingredients

  • 2 ½ cups gluten free flour
     
  • 1 tablespoon cornstarch
     
  • 1 teaspoon salt
     
  • 2 eggs (room temperature)
     
  • ½ cup of coconut oil
     
  • ½ tablespoon vanilla extract
     
  • ¼ cup granulated sugar
     
  • ¼ cup brown sugar
     
  • 2 cups chocolate chips
     

Prepare 

Heat oven to 375 degrees. In a large bowl, mix flour, cornstarch, and salt together. In a separate bowl, mix the eggs together. Combine melted and cooled coconut oil, vanilla extract, and sugar into another bowl. Blend until the mixture is even. Add the mixtures together and then fold in chocolate chips. Use a tablespoon to drop dough about 2 inches from one another on an ungreased baking sheet. Bake for about 10 minutes. Watch the sides of the cookies for browning. You do not want to over bake them.
