Nothing screams 4th of July like celebrating with friends and family around a delicious spread of delectable barbeque food. But, what if you’re on your own health journey? The temptation to slip-up on all your work so far is real, however, it isn’t necessary! Check out these healthy 4th of July recipes that will not only let you indulge in the festive goodness but will also keep you striving towards your health goals!

Shrimp and Veg Skewers

While everyone is prepping their burgers and hot dogs, you can definitely prep this simple and easy recipe that’s not only delicious, but also healthy!

Ingredients

  • 1 tsp cumin
  • 1 tbsp garlic
  • 1 tsp paprika
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 lb shrimp, frozen or fresh (if frozen, defrost accordingly)
  • 1 onion
  • 2 green bell peppers
  • 3 tomatoes
  • 1 bag of skewers

Recipe

  1. Blend the cumin, garlic, paprika, salt and pepper into a mix. Then, rub into shrimp and let it sit.
  2. Cut the onion, bell peppers and tomatoes into small, but thick bite sizes
  3. Put the shrimp, bell pepper, onion and tomato onto the skewers. Alternate between shrimp and vegetables.
  4. Throw it on the barbeque and cook until the shrimp is pink. Then, enjoy!
     

Strawberry Salad with Balsamic Vinaigrette

This salad absolutely encompasses summer and 4th of July. Be sure to throw this one in for your barbeque!

Ingredients

  • 2 cups fresh strawberries
  • 8 cups mixed green salad
  • ½ red onion
  • ⅓ cup sliced almonds
  • ⅓ cup feta cheese crumbles
  • 1 tbsp freshly ground black pepper

Ingredients for Balsamic Vinaigrette Dressing

  • 2 tbsp balsamic vinaigrette
  • 2 tbsp dijon mustard
  • 2 tbsp honey
  • 1 tsp salt
  • 6 tbsp olive oil

Recipe

  1. Wash and slice strawberries. Wash and dry mixed salad greens.
  2. Thinly slice red onion.
  3. Make the balsamic vinaigrette dressing--whisk the balsamic vinaigrette, dijon mustard, honey and salt. Gradually add the olive oil and whisk together until creamy.
  4. In a salad bowl or serving dish, lay down the salad greens then top with strawberries, almonds, onions and feta. Drizzle the balsamic vinaigrette dressing over and serve!

Peach Dump Cake

Nothing completes 4th of July like a delicious dessert. This one will be the small splurge in your diet.

Ingredients

  • 2 cans sliced peaches
  • 1 tsp ground cinnamon
  • 1 box yellow cake mix
  • 1 ½ sticks of butter (optional)
  • Ice cream, for serving
  • Cooking spray

Recipe

  1. Preheat oven to 350 degrees.
  2. Grease baking dish.
  3. Combine peaches and cinnamon in baking dish and stir. Spread evenly.
  4. Pour cake mix over peaches in an even layer.
  5. Dollop the butter all over the mixture (optional).
  6. Bake until cake is cooked evenly, about 55 minutes. Serve with ice cream and enjoy!
