Oven Baked Chicken Tenders with Almond Flour

Chicken tenders are always a crowd-pleaser for obvious reasons. When it comes to great taste and convenience, they just can’t be beaten! Is there anything more delicious than juicy chicken covered in a tasty, crunchy shell? We don’t think so.

Although some chicken tenders seem to make their way to the “do not eat” list as we grow up, our love for the childhood favorite hasn’t faded. That’s why we decided to lighten it up with this easy-to-make recipe. Shh…. If you listen really closely, you’ll hear your inner child rejoicing.

INGREDIENTS

  • 1 ½ lbs boneless, skinless chicken breasts, cut into strips

  • 1 egg

  • 1 cup almond flour

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp paprika

PREPARE

  1. Preheat oven to 425° and line a baking sheet with parchment paper.

  2. Mix all your dry ingredients in a large, shallow bowl. This will be where you bread your chicken tenders.

  3. In another bowl, break your egg and whisk to fully incorporate yolk.

  4. One at a time, dip strips of chicken into the egg dish, then roll in dry ingredients. Place coated tenders evenly on baking sheet.

  5. Bake for 10 minutes, remove from oven, flip, and bake for 10 more minutes. Chicken tenders should be golden in color and cooked all the way through. Allow to cool slightly before serving.
